Cinnamon Flakes, Cassia Cassia cinnamon flakes come from the bark of the Evergreen Laurel tree. The flavor of cinnamon is due to the essential oil in the product. The higher the oil content the stronger the cinnamon. The pieces are about 3/4 inch to 1 1/2 inches in length. The flakes can be ground for cooking in desserts, donuts, tea, or cocoa. The flakes can also be used in potpourri. Cinnamon is said to help the digestive system or to help with the common cold.
